This sheet pan sausage, peppers and potatoes recipe is exactly the kind of dinner I love on a busy evening – simple ingredients, very little washing up and everything roasting together until golden and full of flavour. The potatoes turn crisp around the edges, the sausages become beautifully browned, and the peppers and red onion soften and caramelise in all those lovely pan juices.

It is hearty enough to serve on its own, but you can easily add a simple green salad on the side. And if you are in the mood for another cosy dinner, try our Creamy Apple Cider Chicken Skillet.

Steps

1
Done

Start the potatoes

Preheat the oven to 220°C / 200°C fan / 425°F.
Place the potatoes on a large baking tray and drizzle with 1 tbsp of the olive oil.
Season with half of the smoked paprika, thyme, oregano, salt and black pepper.
Toss well, spread into a single layer and roast for 15 minutes.

2
Done

Add the sausages and vegetables

Remove the tray from the oven.
Add the sausages, red pepper, yellow pepper and red onion around the potatoes.
Mix the remaining olive oil with the garlic and the rest of the seasonings, then drizzle it over everything.
Gently toss the vegetables so they are evenly coated, keeping the sausages whole.

3
Done

Roast until golden

Return the tray to the oven and roast for another 25–30 minutes.
Turn the sausages and stir the vegetables once halfway through cooking so everything browns evenly.
The sausages should be cooked through and deeply golden, while the potatoes should be crisp at the edges and tender inside.

4
Done

Finish and serve

Sprinkle the chopped fresh parsley over the tray just before serving.
Taste the vegetables and add a little more salt or black pepper if needed.
Serve straight from the tray while everything is hot and crisp.
