This recipe is really impressive. The main ingredient is eggplants. We recommend you adding as much vegetables as possible in your meals. They are not only nutritious but also extremely delicious and flavorous. We are making roasted eggplants. This recipe requires slightly more time to prepare but we promise you it will worth every minute spent in the kitchen.

Trim stems off the eggplants and slice in half. Scoop them. Sprinkle with salt and set aside. Don't throw the scoopings because they will be added to the stuffing later.
