I present to you a recipe for one of the most famous desert in Turkey, along with baklava – Revani. Due to the fact that it is so delicious, it has gained popularity outside the country and more and more people have been asking for it. Recipe is very easy and with it, you will make one of the most delicious and juicy desserts you have ever tried!

Making the sponge cakeIn a large bowl, mix the eggs, a pinch of salt, sugar and vanilla. Mix it well. Mix until foamy mixture. Separately mix the flour with the baking powder and then add it to the egg mixture. Continue to mix until homogeneous mixture. Once the mixture is ready, it's time for baking. Preheat the oven at 180 C Degrees (Fan). The tray I use for the cake is 25x30 cm. The bottom of the tray does not need to be greased or baking paper. Pour the mixture into the tray and bake it for about 20-25 minutes! After baking leave the cake aside to cool. |

Making the syrupPour 800 ml water in a pot. Add 2 cups sugar (or to taste), lemon zest, few drops lemon juice, 1 tbsp Honey and leave it to boil. Let boil for about 10 minutes. The syrup is ready! |

SyrupingUsing a ladle, begin to pour the hot syrup over the cake. Pour, wait for it to absorb and then again until the cake absorbs all the syrup. If you like you can serve the Revani with cream! |
