Directions
How about cooking aubergines. We will fry them in fat and then garnish them with an aromatic sauce of garlic, yoghurt and fresh parsley. Sounds appetizing!
You should know that when cooking aubergines, first have to peel them, cut them and leave them to sit for a few minutes in salted cold water. As you will notice,
aubergines will stain the water. When the water is stained you will know that the biterness is taken care of.
The sauce is very easy to make. Stir 3-4 tablespoons yoghurt. Add 1 tablespoon of mayonnaise, chopped fresh parsley and fine chopped garlic clove.
In addition, this sauce will add more freshness to fried aubergines.
They can be fried on a frying pan or in a fryer.
