For the syrup:

½ cup Brown or White sugar

Directions
This is one of the most delicious desserts we have ever tasted. It is super easy to make and requires very few ingredients.
You should make it, trust us. You will be impressed! So moist and puffy, it literally melts in your mouth.
However there are two stages in the making of Ravani:
First, make a syrup for covering the cake.
Second, make a cake.
In order for the cake to be soft and puffy, you should beat egg whites into snow and then add yolk and flour mixture.
Garnish with vanilla and lemon zest. Your kitchen will be filled with their pleasant aroma.
Remember: There is one basic rule you should mind when making syrup desserts – either cake or syrup must be hot, not both. In this case the cake would be hot and the syrup cold.

First, let`s make the syrup. |

Put a pot on the stove. Pour water and sugar. Add lemon zest for aroma. Stir and let it boil. Boil for 5-6 minutes and remove from stove to cool. |

Now let`s make the cake. |

In two separate bowls divide egg whites and yolks. |

Add ½ cup sugar, a pinch of salt to the yolks. Beat them using an electric mixer until the sugar is completely melted. |

Add flour, baking powder and vanilla to this mixture. Whisk until all ingredients are absorbed. |

Beat the egg whites into snow. Add 1 tsp lemon juice and a pinch of salt. |

Now mix together the two mixtures. You should mix them very carefully otherwise the egg whites would lose their airy look. Stir with a wooden spoon. Stir slowly and carefully. |

Spread the mixture in a greased baking dish. |

When ready slice in square or diamond-shaped pieces and cover with the cold syrup. |
