2/3 Sugar
1/2 cup Vegetable oil
50 gr. Walnut
3 tbsp Coconut
5 gr. Baking powder
a pinch Vanilla

If you follow this recipe to make cupcakes, you will end up with some very soft and moist ones πŸ™‚

From this mixture you will make 12 cupcakes. Double the dose if you want more. I am sure you will!

Making the mixture for the cupcakes

2 eggs into the bowl. Add the sugar and mix it. Then the vegetable oil, the vanilla and continue to mix it. Add the flour and the baking powder. Mix it very well.

Walnuts and coconut

Add the walnuts and the coconut (shredded). Mix it and the mixture is ready! Turn on the oven at 180 degrees. The oven must be preheated!

Filling the cupcake tins

Fill 2/3 of the volume of the cupcake tins. It is time for baking. Bake the cupcake for about 15 minutes. My oven is with fan and 15 minutes are enough for baking!

On the top of the cupcakes you can decorate with whatever you like - frosting, icing sugar, chocolate.....
