500 gr. Spinach
200 gr. Mushrooms
1 Onion
100 ml. Vegetable oil
100 gr. Parmesan Cheese or mozzarella
to taste salt

We will cook a spinach dish – spinach risotto. In addition to being very healthy, spinach makes every dish much more fragrant and tasty. We call for the inclusion of as many vegetables as possible in the menu.

The time spent cooking will reward us with a more tasty and healthier meal. The dish that we will make is a combination of rice and spinach – risotto with spinach. As probably most of you have seen, shops are selling special risotto rice. Use it for the best result.

Turn on the hot plate and put a deeper pan. Pour the oil and put a slice of butter. When the fat gets hot, cut the spinach, onion and cloves of garlic. Put the chopped vegetables
in the pan to start frying (or rather stifling). Stir.

Add mushrooms cut to washers. Once the spinach has softened, and this will happen quickly, add the rice and stir again.
Season with salt and black pepper. Start adding water or broth little by little and gradually.
Add a little. After the rice absorbs the liquid, add again and repeat until the rice is cooked.
Finally, put Parmesan, stir and serve while the dish is warm!
