On medium heat, in a large skillet or cooking pot, heat the chicken or vegetable broth together with water. |

Add the sliced lemongrass, kaffir lime leaves, mushrooms, bell peppers, chili peppers, garlic, and galangal (or ginger). Let it simmer for about 5 minutes to blend the flavors. |
