2 Pork Kidney

3 medium onions, thinly sliced

2 garlic cloves, finely chopped

1 tbsp chopped fresh parsley

2 tbsp sunflower oil

Directions
Cooked properly, pork kidneys are tender, savoury and surprisingly delicious. In this simple recipe, they are gently simmered first, then quickly fried with plenty of onions, garlic and paprika.
I still remember the first time I tried pork kidneys. I was genuinely sceptical and almost certain that I would not enjoy their stronger flavour. I was wrong. Prepared this way, with soft golden onions and a little lemon at the end, they make a wonderfully comforting dish.
The only part that needs a little care is the cleaning. Remove the white core and any membrane from the kidneys before cooking. If you prefer a milder flavour, soak them briefly in cold water with a spoonful of vinegar, then rinse them well.

Serve the kidneys straight from the pan with crusty bread, mashed potatoes or a simple green salad. If you would like a richer version, try our fried pork kidneys with tomatoes and onion.

Prepare the kidneysRinse the kidneys under cold running water, cut them in half lengthways and carefully remove the white core and any membrane. For a milder flavour, place them in a bowl of cold water with the vinegar and leave for 20 minutes. Drain and rinse once more. |

Simmer gentlyPlace the cleaned kidneys in a saucepan and cover them with fresh cold water. Bring to the boil, then reduce the heat and simmer gently for about 20 minutes. Drain, leave them to cool slightly, then cut them into bite-sized slices. |

Cook the onionsHeat the sunflower oil in a large frying pan over a medium heat. Add the sliced onions with a small pinch of salt and cook for 7β8 minutes, stirring occasionally, until soft and lightly golden. Add the garlic and cook for another minute. |

Add the kidneysAdd the sliced kidneys to the pan. Season with the paprika, black pepper and chilli flakes, if using. Fry for 3β4 minutes, stirring regularly, until everything is hot and well combined. |

Finish and serveRemove the pan from the heat and stir in the fresh parsley and lemon juice. Taste and add more salt if needed. Serve immediately while the kidneys and onions are still hot. |
