Preheat the oven to 180°C |

Rinse the beef and pat it dry with paper towels. |

In a small bowl, mix together the olive oil, black pepper, salt, dried herbs, and sliced garlic. |

Rub the beef with this mixture on all sides, massaging it well to ensure the seasoning permeates the meat. |

Place the beef in a large roasting pan and cover it with aluminium foil. |

Roast in the preheated oven for about 20 minutes per half kilogram of meat, starting to check with a meat thermometer about half an hour before the expected doneness. The internal temperature should reach around 57°C for medium-rare, 63°C for medium, and 71°C for well-done. |

Once the meat is cooked to your desired doneness, remove it from the oven and let it rest for about 10-15 minutes before carving. This will help to redistribute the juices within the meat. |
