3-4 zucchini
1 lb minced pork meat
1 carrot
1 onion
4-5 potatoes
1 garlic clove
salt and black pepper
bay leaf

That’s right! We are making delicious zucchini moussaka.

Moussaka is a traditional Greek dish that has been a part of Bulgarian national cuisine for many years. So in a way it might as well be considered Bulgarian.

There are plenty of moussaka variations depending on the ingredients used.

Bulgarian type of moussaka is usually made with potatoes, minced meat, vegetables and topping.

The authentic Greek one is with eggplant, minced meat and topping. The Topping could be bechamel sauce or a mixture of eggs, yogurt or milk and a very little flour.

However today we are giving you zucchini moussaka.

We will add 2-3 potatoes, onion, carrots and lots of spices.

One of the basic spices for moussaka is savory. It is not so well-known in English cuisine but definitely deserves your attention.

Anyway, lets stop wasting time and get on with it… 🙂

First fry some of the ingredients.

In a greased saucepan place onion and a carrot both chopped. Add minced garlic clove and stir. When the vegetables start to roast add the meat and break it to pieces using a spacula. Sprinkle with salt, black pepper, savory and a bay leaf.

Fry for about 6-7 minutes.

Slice zucchini and potatoes in cubes. Place them in a baking dish. Sprinkle 2-3 tbsp flour and a pinch of salt. Mix in well.

Spread the meat and the vegetables on top of that mixture. Pour 1 cup water, stir and place the dish in the oven. Bake at 220 degrees until the potatoes are done.

Meanwhile lets make the topping:

In a large bowl whisk eggs, milk, flour and a pinch of salt.
When the potatoes and zucchini are ready, pour the topping and bake until it gets a tasty brown look.
