A roll is usually a sweet delicious pastry with chocolate, fruit or jelly filling. At least that’s typically what most people assume. We, on the other hand, decided not to stick with that assumption and dared to make a veggie roll with zucchini. The result was simply amazing!

That’s why we decided to share this recipe with all of you – Zucchini roll…

Since zucchini is a vegetable with high water content it requires to be squeezed after grating so that the excess water can drain.

There will be no flour in the cake. We will use only eggs and grated cheese to create cohesion of the ingredients.

The filling is made with cream cheese, minced garlic and fresh dill. All these ingredients go perfectly with zucchini.

Of course you can spruce the recipe and add ham or chicken or even bacon. It is up to you.

Whatever you choose the result will be impressive, we guarantee!

Grate zucchini and squeeze the excess water. Place in a bowl and sprinkle with salt and black pepper. Add eggs and cheese. Stir with a fork.

Preheat oven to 200 degrees.

Cover a rectangle dish with a baking sheet.

Spread the mixture and place it in the oven. Bake at 220 for 20 minutes until the cake gets brown and creates crust.

Meanwhile make the filling.

Mix in cream cheese with minced garlic and some fresh dill. Mix in well. The filling is ready.

As soon the cake is done, remove from oven and invert onto a bread board.

Carefully remove the baking sheet. Leave it to cool for a couple of minutes. Spread the filling and roll the cake.
